Recipe adapted from the Better Homes and Gardens Cookbook:
Easy Dinners, Healthy Recipes
6 chicken breast tenderloins
1/4 cup all-purpose flour
1/4 tsp. ground black pepper
2 Tbl. butter
1/2 cup chicken broth
4 Tbl. lemon juice
1 Tbl. cornstarch
1 green onion, sliced
Lemon slices for garnish
Directions:
Place chicken tenderloins between plastic wrap and pound until 1/4-inch thick.
In a shallow dish, stir together flour and black pepper.
Lightly coat each piece of chicken with flour mixture.
Heat large skillet on medium high heat, add 2 Tbl. of butter to pan.
Cook chicken breasts 4-6 minutes on each side until cooked evenly.
Remove chicken from skillet and cover to keep warm.
For sauce, in a small bowl stir together broth, lemon juice and cornstarch.
Add to skillet. Cook over medium high heat until thickened.
Cook for another 2 minutes or more.
Stir in green onions.
Top chicken with sauce and lemon slices.
I served this dish with stuffing and green peas.
