Green Velvet Cupcakes

To celebrate St. Patty's Day, I made green velvet cupcakes!

Ingredients:

2 1/2 cups all-purpose flour
2 cups granulated sugar
1 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 large eggs
1 cup canola or vegetable oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
1 oz. bottle of green food coloring



Directions:

-Preheat oven to 350 degrees

-put cupcake liners in your cupcake pan

-Whisk eggs together in a medium size bowl

-Add oil, buttermilk, vinegar, vanilla and food coloring

-Mix together dry ingredients (flour, sugar, cocoa, salt, baking soda) in a separate bowl

-Slowly add in your wet ingredients to your bowl of dry ingredients

-Pour into cupcake pan until halfway up the cupcake liner

-Bake for 22-24 minutes or until toothpick comes out clean

-Cool on wire rack

-Frost with store-bought frosting or homemade (recipe below)

Cream Cheese Frosting

Ingredients:

8 oz. cream cheese (1 block) - room temperature
1 cup butter (2 sticks) - room temperature
1 teaspoon vanilla
6 cups powdered sugar



Directions:

-Beat cream cheese and butter together in large bowl until creamy

-Add vanilla to mixture

-Add powdered sugar to mixture (1 cup at a time)

-Frost those cupcakes!!
