More Weeknight Dinners

Warning: I am not a photographer nor a Chef. I just cook tasty weeknight meals for my hubby and most importantly--me! Luckily, I don't have to submit Baby Calan to my cooking just yet. It may not look good but it sure does taste good!
My Husband's Favorite Salad


What makes this salad good:
Bag of Salad Mix
Shredded Cheese
Hard Boiled Eggs
Crumbled Bacon
Melissa's Chicken
Diced Carrot
Diced Red Onion or Green Onion
Directions for Melissa's Chicken: Marinate chicken breast tenders in Italian Dressing for 15-20 minutes. Coat in instant potato flakes. Fry in Tablespoon of olive oil until golden brown.
Quick Dressing:
1/3 olive oil
3 T red wine vinegar
1 t lemon juice
1/2 t sugar
1/2 t salt
1/4 t garlic powder
1/4 dried oregano
1 pressed garlic clove




Golden Skillet Chicken

4 Skinless, boneless chicken breast halves
1 Can Golden Mushroom Soup
3/4 cup chicken broth
4 oz. cream cheese (1/2 package)
1/2 pktg. Thin Spagetti

1. Cook Chicken until golden brown in nonstick skillet.
2. Remove chicken and set aside.
3. Add soup, broth and cream cheese to hot skillet. Cook and stir over medium heat until mixture is heated through. Serve chicken and sauce over hot cooked pasta.

I served this with a side salad.



Bacon Cheeseburger Pizza

What you'll need:
Refrigerated Pizza Dough
Bacon
Lean Groud Beef
Shredded Pizza Cheese
Pizza Sauce
Red Onion
Favorite Hamburger Toppings

Cook ground beef in nonstick skillet and set aside. Cook bacon until crisp and set aside. Unroll pizza dough on cookie sheet and spread with pizza sauce. Then put copius amounts of shredded cheese on top of the sauce and then proceed with the beef and crumbled bacon, red onion. Follow directions for cooking on package of pizza dough. After you take it out of the oven, add your favorite hamburger toppings. I added pickle slices and mustard! It tasted just like a bacon cheeseburger!
